Happy Monday! I hope everyone had a great Easter weekend. Mine was SO wonderful, I didn't want the weekend to end...

One of the staples in my kitchen always seems to be bananas, yet I always seem to let them brown before eating them. I usually toss them (awful, I know...) but on a rare occasion I get my act together and make banana bread or banana muffins.

I have a mild obsession with greek yogurt, and I always try to incorporate it into any recipe I can find. This time, I made a "lighter" banana bread with greek yogurt (and then fattened it up with chocolate chips, because why not). The yogurt boosts the banana bread with high levels of protein and calcium, which makes it a great breakfast! Feel free to omit the chocolate chips to make it even healthier, or give yourself a break and tell yourself it's healthy enough with the greek yogurt... so it makes eating chocolate chip banana bread for breakfast totally acceptable :)

"Lighter" Chocolate Chip Banana Bread

Ingredients

½ cup butter (1 stick) softened

1¼ cup sugar

2 eggs

1 tsp. vanilla extract

1 cup banana pulp, mashed (about 3 ripe bananas)

4 Tbsp. Greek yogurt

1½ cup all purpose flour

1 tsp. baking soda

¼ tsp. salt

1 cup nuts (I use sliced almonds)

For Chocolate Chip Banana Bread

Reduce sugar to 1 cup

Add ½ cup semisweet chocolate chips

 

Directions:

Preheat oven to 350 degrees.

In a large bowl with electric mixer on medium speed, cream together butter and sugar. Add eggs one at a time and mix well. Add vanilla extract, banana pulp, and Greek yogurt, mixing well after each ingredient.

In a separate bowl, mix flour, baking soda and salt to combine. Gradually add flour to the wet ingredients and mix until just combined on low speed. Mix in nuts until well combined.

Pour batter evenly into a greased loaf pan and bake for 35-40 minutes or until a toothpick inserted into the center of the loaf comes out clean.

For Chocolate Chip Banana Bread

After the dry ingredients are added to the wet ingredients, fold in chocolate chips.
